Enzymes are biocatalysts, i.e. compounds that accelerate many chemical reactions. They have many functions, and in the digestive tract they are responsible for the proper digestion of sugars, proteins and fats and for breaking them down into less complex forms that are absorbed by the body. Human digestive enzymes are mainly produced in the pancreas and small intestine. Man does not produce all enzymes, so he cannot digest some compounds.

Amylase is produced by the pancreas as a component of pancreatic juice and by the salivary glands - it is a component of saliva. It breaks down starch and other complex sugars. In diagnostics, it is used as an indicator enzyme when its level is significantly elevated.

Pancreatic lipase belongs to the group of enzymes involved in the breakdown of fats produced by the digestive system. In this group, it is the most important enzyme. Like amylase, it is an indicator enzyme.

Cellulase is an enzyme that breaks down bonds in cellulose, i.e. plant polysaccharide. Cellulose is not digested by the human digestive tract because these digestive enzymes cannot break down the bonds that exist between the molecules that make up cellulose. This enzyme is produced by fungi, bacteria and some parasitic plants. Currently, it is used by man in processing, among other things, as a feed ingredient, it is also used for beer fermentation and filtration.

Lactase is an enzyme that breaks down lactose - a disaccharide found in milk. After a period of breastfeeding with breast milk, human bodies naturally stop producing lactase. It was not until the domestication of cattle and the use of their milk that the secretion of the enzyme was maintained, thanks to which most adults are able to drink milk and eat dairy products. Symptoms of enzyme deficiency are abdominal pain and bloating caused by the digestion of excess undegraded lactose in the digestive tract.

Proteases are a large group of enzymes with a wide range of applications, not only digestive - they are responsible for breaking down peptide bonds, i.e. those found in proteins. They regulate many physiological processes by activating, synthesizing or digesting proteins contained in food.
