Broccoli sprouts are the first green sprouts that emerge after the seeds have sprouted. Visible just a few days after sowing, they can be recognized by their white, thin stems and small green leaves. Like sprouts of other vegetables, they have a fresh and distinct taste, not reminiscent of ripe broccoli.

Broccoli sprouts have a similar nutritional profile to other cruciferous vegetables (such as kale, Brussels sprouts and cauliflower), but due to their size, all the vitamins and minerals are in a more concentrated form.
